It's finally the time of year wear you can make cookies everyday, and eat as much as you want without feeling bad! My family has made over 4 types of cookies this week. I am going to share with all of you my favorite cookie, Gingerbread Cookies! I love these because they just taste like the holidays (if that's even a thing)! This was the first gingerbread my mom had when she was young, while she was in Williamsburg VA. My grandma got the recipe for her and my family has been making these every year since.
Gingerbread Cookies
Ingredients:
cookies:
1 cup granulated white sugar
2 tsp ginger
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp salt
1 1/2 baking soda
1 cup butter softened
1/2 cup evaporated milk
1 cup molasses
3/4 tsp vanilla extract
4 cups white wheat flour
Directions:
Combine the sugar, ginger, nutmeg, cinnamon, salt and baking soda. Mix well.
Add the butter, evaporated milk, and molasses, and vanilla. Mix well. Add the flour 1 cup at a time. The dough should be stiff enough to handle without sticking to fingers. Kneed the dough for a smoother texture.
Ass additional flour to prevent sticking. Put the dough in the refrigerator so it is easier to roll out.
Roll dough out 1/4" thick on floured surface and cut into cookies.
Bake for 8-10 min at 375 degrees.
When cookies are cool, frost.
Frosting
Ingredients: 1 lb (2 cups) powdered sugar
1/2 cup softened butter
1 tsp vanilla extract
3 Tbs. milk
Directions:
Mix all ingredients together.
